Airline companies fly passengers all over the world on short and long haul flights. The airline business is highly competitive and airline companies try to satisfy customer needs and ensure that all passengers have a safe and comfortable flight.

Some passengers have special dietary requirements and they must request these when booking their flights. The airlines have to cater to these special needs. Some examples include: Vegan, Vegetarian, Gluten-free and Diabetic diets.

An airline has approached you to develop a new airline meal that caters for either:

         

HIGH FIBRE DIET

LOW FAT DIET

A female passenger who is 51 years old and on a HIGH FIBRE DIET because she has intestinal problems. You need to adapt the standard beef noodle dish and INCREASE the fibre content by at least 50%. A male passenger who is 51 years old on a LOW FAT DIET because he has a heart condition and a high blood pressure. You need to adapt the standard beef noodle dish and DECREASE the fat content by at least 50%.
         
  You are required to produce the following work;
1. Research into an airline of your choice.
  2. Research into either HIGH FIBRE or LOW FAT diets.
  3. Adapt a beef stir fried noodle dish to cater for your chosen dietary need.
  4. Select an appropriate starter, dessert, snack and drink for your dietary need.
  5. Produce a menu with a nutritional analysis of the adapted recipe.
  6. Evaluate your work.
