Casing:

 

2 flour tortillas

 

Refried Bean Filling:

 

1 tbsp olive oil

1/4 onion diced

1 garlic clove

1/4 tsp ground cumin

70 g red kidney beans

pinch of salt & pepper

 

Beef filling:

 

1 tbsp olive oil

1/4 onion diced

1 tomato diced

i garlic clove crushed

1/2 tsp chilli powder

100g minced beef

1 tsp tomato paste

1 tsp fresh coriander  

 

Method of Production    

 

Refried beans.

1. Dice the onion. In a saucepan over a low heat add onion and garlic stirring for 3 minutes until soft. Add beans and cumin to saucepan. Cook stirring for 5 minutes. mash until smooth.

 

Beef filling.

1. Prepare onion and garlic, coriander and tomato. In a saucepan over a medium heat  add onion and garlic stir for 3 minutes. add beef and chilli powder cook for a further 5 minutes. Add tomato paste, tomato, coriander and salt and peeper. cook for 3 minutes until beef is no longer red.

 

2. Grate the cheese. Evenly divide and spread refried beans onto tortilla with a knife. Top with beef mixture, grated cheese and add some shredded lettuce. Fold up the burrito as demonstrated. Sprinkle cheese over the top and cook in an oven for 10 minutes at 200c.
